Atlantis Casino Resort's restaurants go green
Food scraps that emanate from Atlantis Casino Resort Spa’s kitchens are being turned into compost in an effort to go green, which also sees all paper, cardboard, tin and aluminium recycled.

“We’re not there 100 percent, but I think 80 percent,” said Sergio Guzman, the property’s executive steward, about the recycling program. “As times goes on, I think we’ll get to 95 percent. ... I’ll not say 100 percent, but we have come a long way.”

The program was put into effect in December and concertrates on organic waste recycling.

“At first, it was successful with people actually doing the separation,” said Guzman. “Then, we colour-coded the containers to make it easier. It worked.”

the first week of the program saw roughly a quarter of an industrial size rubbish container collected. Now a full container is collected on a daily basis.

“We try to get 100-percent clean compost for them,” Guzman said.
