Food scraps that emanate from Atlantis Casino Resort Spa’s kitchens are being turned into compost in an effort to go green, which also sees all paper, cardboard, tin and aluminium recycled. “We’re not there 100 percent, but I think 80 percent,” said Sergio Guzman, the property’s executive steward, about the recycling program. “As times goes on, I think we’ll get to 95 percent. ... I’ll not say 100 percent, but we have come a long way.”
